Banana Oat Pancakes (GF)

May or may not have listened to Banana Pancakes by Jack Johnson in the process of these bad boys. If you don’t know that song - then you and my middle-school self would not get along. But these are more than just banana pancakes… they are made with MINIMAL ingredients, are gluten-free, and are super easy (my favorite part). They are made with oats vs. other refined flours typically used in pancakes (hello fiber!) and are versatile to add any toppings you want for extra yumminess!

Ingredients:

  • 1 banana

  • 1/2 cup unsweetened almond milk

  • 1 and 1/2 cup rolled oats (GF if needed!!)

  • 2 eggs and 1 egg white

  • 2 tbsp maple syrup

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1-2 tbsp ground flaxseed for extra fiber

  • Toppings (chocolate chips, fruit, nuts, coconut, etc).

Directions:

  1. BLEND all these ingredients (with mixer or in a blender) for a desired thickness

  2. Pour into pan that is buttered on medium-heat and let cook on each side for ~2 minutes

  3. Add in whatever goods you like - chocolate chips, coconut flakes, fruit, nuts, etc.

  4. Top with some maple syrup and enjoy
