It is winter time and that really just means soup, chili, jambalaya on DECK each week because it’s cold, it’s rainy (here in Seattle area…) and who doesn’t love a big crockpot of warm soup? I promise… you won’t regret making this one and might give you some brownie points with whoever you make it for!

  • 1 package andouille sausage

  • ½ pound shrimp

  • 3 bell peppers diced

  • 1 diced onion

  • 2 jalapeños seeds and stems removed - more or less depending on your tolerance!

    • PSA: make sure to wash hands before touching your eyes!!

  • 2 cups uncooked brown rice

  • 2 cups low sodium chicken broth

  • 1 30-ounce can Cajun flavored diced tomatoes

  • 1 tb minced garlic

  • Dash of chili powder

  • Salt and pepper to taste

  1. Cook all ingredients in a large crockpot besides rice and shrimp on low for 2-3 hours.

  2. Add in rice and cook for another hour.

  3. Add shrimp ~20 minutes before eating

  4. About 3-4 hours total cook time!
