Lemon & Garlic Pasta with Shrimp


The sun was OUT this weekend and after having a loaded Saturday with friends eating burgers, fries, ice cream, and margaritas, I was craving a fresh and light Sunday dinner. It didn’t hurt that it felt like summer today and I was able to open my windows and porch door for a perfect cross breeze. This meal was easy and only needed one pot! The BEST!



  1. Defrost shrimp and set aside in bowl of water

  2. Cook pasta according to directions in salted water

  3. Once cooked through, drain pasta and pour back into the pot

  4. Keep heat on medium low and add in garlic and olive oil - cook for a 3-5 minutes and coat pasta with the oil

  5. Add in grape tomatoes and any other vegetables of choice

  6. Turn heat off, squeeze lemon, seasonings and mix together

  7. Add shredded parmesan on top for extra flavor


  • Box of pasta (linguine would work great here, I had some brown rice pasta on hand)

  • 1/2 lb of pre-cooked shrimp defrosted in water

  • Olive oil (didn’t measure, enough to coat the pasta lightly)

  • 1-2 tbsp minced garlic

  • Grape tomatoes

  • Juice from 1/2 lemon

  • Dash of parsley and rosemary

  • Salt and pepper to taste

  • Shredded parmesan cheese to taste
