Roasted Delicata Squash Salad
Have you ever tried delicata squash? It is part of the winter squash family, and delivers delicious flavor, nutrients, and color to any meal! Another bonus - you can eat the rind! A pun of a name, the outside of a delicata squash is literally, delicate. That’s another reason this vegetable is so easy to incorporate!
To make: Cut the squash in half vertically. Scoop out the seeds, cut pieces that look like “U” and toss in avocado oil (best for higher heat cooking) and bake for about 20-30 minutes on 400 F. For a sweeter taste, can season with brown sugar or cinnamon, or can toss on spices like tumeric for healthy anti-inflammatory benefits!
In this salad: Mixed greens, roasted delicata squash, walnuts (healthy fats), goat cheese and cranberries topped with olive oil and vinegar!
