Avocado Spinach Basil Pesto
Growing up, my Dad would always make his own pesto with pretty simple ingredients - fresh basil, garlic, oil, parmesan, and maybe 1 or 2 other things. We had it STOCKED in the freezer for an easy pasta night or to add onto mozzarella and roasted red pepper sandwiches on Ciabatta bread (this was a staple). Once I left for college and lived away from home, I would always ask him to bring me a jar or two when he came to visit. So when I got myself a food processor, I decided to try out my own while adding a little “trendy” to it with avocado. It came out fresh and delicious - and I’ve made it probably 4-5 times now. Each time I forget to snap a pic - so here’s a spoonful of the leftover goodness.
Note: this makes about 1 cup of pesto - can half recipe if only using for 1-2 people!
Directions: Place all ingredients in a food processor and blend until smooth!
1 cup fresh basil
1/2 cup of spinach
1/4 cup pine nuts
1/4 cup parmesan cheese grated
2 tbsp olive oil
1/2 tbsp garlic
3-4 tbsp water (can add more dependent on thickness)
