Apple Cinnamon Bread

Perfect for Apple Picking season!!

What do you do when you have an entire half bushel of apples?? There are tons of options - but I am a CARB lady… and making apples into a bread is ideal for me. NOTE: this recipe only used one apple, but I think you could add in another for more flavor and use! Enjoy the deliciousness and the AMAZING smell that is about to fill your house!


  • Preheat oven to 350F

  • Set cinnamon and brown sugar aside in a bowl to pour onto bread once mixed

  • Melt coconut oil (or butter) and mix with all wet ingredients

  • Slowly add sugar and mix throughout

  • Add flour until mixed through

  • In a loaf pan, spray or lay parchment paper and pour half the batter

  • Add 1/2 of the chopped apples and some of the cinnamon/brown sugar mix

  • Pour the rest and then the rest of apples and more cinnamon sugar

  • Bake for 50-55 minutes


  • 1 apple cut into tiny cubes

  • 2 eggs

  • 1 cup all purpose (I used GF flour)

  • 1/2 cup coconut flour (more protein 💪🏻)

  • 1/2 c coconut oil

  • 2/3 cup coconut sugar (or white)

  • 1/2 cup brown sugar

  • 1/4 tsp salt

  • 1/2 cup milk (I subbed almond)

  • 1.5 tsp baking powder

  • 1.5 tsp cinnamon

  • 2 tsp vanilla extract
