Chocolate Coconut Energy Balls

Another one of my faves - especially around the holidays because they are SO pretty!!! Perfect way to brighten your day with a little treat or bring into the office to share!

DIRECTIONS:

Put these together in mixing bowl. In separate melt 1/2c PB, 1/3c honey, 2 tb coconut oil and add this melted mix with the dry ingredients. Form into balls and dip into coconut flakes/chia seeds or any topping you want! (Recipe I used called for almond flakes). Set in fridge and enjoy as soon as they form! 

INGREDIENTS:

  • 1c oats

  • 3 tb cocoa powder

  • 1/3c coconut and extra for coating

  • 1/2c ground flaxseed

  • 1/3c cranberries (optional)

  • 1 tb chia seeds

  • Chopped chocolate or chips

  • Dash salt
